Albillo Mayor by Dominio del Soto
High-altitude vineyards in Ribera del Duero acquired by the Chapoutier family in 2016 after eighth-generation winemaker Mathilde Chapoutier fell in love with their wines. Aged for a year on fine lees in 600L demi-muids from her native Hermitage, this Albillo is a bold, refined white that reflects both its terroir and Mathilde’s Rhône finesse. With subtle notes of smoke, butter, pear, apricot and white blossom over a mineral backbone, it pairs nicely with anything smoked or cooked on coals like our partridge dish this Autumn or our scallops from earlier on in Winter.
Rasteau “1921” by Domaine les Aphillanthes
A classic Rhône blend of Grenache, Syrah, and Mourvèdre from vines up to 100 years old, neighbouring Gigondas in the Rhône Valley. Named after the year the Domaine was founded, this rich, round red shows mature dark fruits, cedar, tobacco and sweet spice with an earthy finish. Winemakers Daniel and Hélène Boulle keep only the finest 80% of their grapes and skip vintages if quality falls short. Perfect for grilled steaks, stews or simply to enjoy on its own by a crackling fireplace.
Tolérance by Franck Pascal
A rosé Champagne blending Pinot Meunier and Chardonnay by the ever-poetic Franck Pascal, known for literally singing to his vines. Crafted with the deepest sensitivity for nature, the result is a wine with the energy of a geyser where smoky mineral notes from its terroir complement ripe red fruits in a crisp mouthfeel. Spicier notes of blood orange, cloves, and ginger linger in the finish. Elegant and playful, it’s our ideal pairing for our signature smoked lobster dish. The name “Tolérance” celebrates harmony in diversity: between red and white grapes and, we hope, among us all this Christmas.
