We’re excited to announce the next instalment of Cardinal Feast will be a collaboration with the brilliant team from Wilsons.

Since opening in 2016, Wilsons has become one of the most respected restaurants in the UK, combining a two acre market garden with a commitment to small scale, regenerative farming. Led by Jan Ostle and Mary Wilson, the team grow the majority of their own produce and cook it simply and beautifully in their Bristol restaurant. Their work has earned them a Michelin Green Star in 2022 and a Michelin Star in 2025.

Tomás and Jan first met cooking at a Gaza fundraiser in January at Carousel, so it felt fitting to make this a fundraising event too.

Together we’ll be serving a five course menu that brings together our individual dishes with some of our favourite recipes from Palestinian cuisine. Most of the produce will come from our friends at The Free Company in Balerno.

All profits from the evening will be donated to the newly opened Palestine Museum Scotland, just around the corner from us on Dundas Street, and the European Legal Support Centre, who provide legal aid for Palestinians and their advocates in Europe and the UK.

As violence continues in the region, the plight of the Palestinian people remains unchanged.
